So, when I had some extra-ripe bananas hanging around the kitchen, my super easy Banana Muffins immediately popped into my mind. STEP THREE: In a separate bowl, mix together 3-4 ripe mashed bananas, ¾ cup granulated sugar, 1 large egg, 2 tsp vanilla extract and ½ cup melted butter.
