What do you do when you’re craving a fluffy homemade donuts and a slice of warm homemade strawberry jam? You make Strawberry Donuts, of course!

This simple recipe are the best of both worlds. They’re the perfect combination of sweet strawberries and a warm melt in your mouth donut. Whip up a simple cream cheese frosting and drizzle over the top to really kick this donut up a notch!

This baked strawberry donuts recipe are soft, moist on the inside, with slightly sweet strawberry flavor, and are full of warm spices, nothing beats a smooth donut. Having spent years in the kitchen I can say these donuts stand up with flavor and texture.

Enjoy these baked strawberry donuts at breakfast with a big ol’ glass of cold milk, a hot cup of coffee, or for dessert with a scoop of vanilla ice cream for the ultimate dessert!

  • all-purpose flour
  • granulated sugar

Strawberry puree

  • chopped strawberries
  • strawberry jam seedless

Unsalted butter: In order to control the salt content of baked goods, it’s important to use unsalted butter as the salt content varies greatly from brand to brand. An overly salty baked good will result in a poor flavored product so if you are unable to use unsalted, be sure to reduce the added salt by ¼ teaspoon.

Vanilla extract: Using a high-quality pure vanilla extract gives a subtle rich sweet flavor while also bringing out the flavors of the other ingredients in the batter.

Strawberries:  Be sure to use fresh as they will add a lot of natural sweetness.

STEP ONE: Make the puree. Stir the strawberries with strawberry jam to a small sauce pan over medium heat until smooth. Let continue to cook until the jam has thickened enough to coat the back of a wooden spoon. Let Cool.

STEP TWO: Make the donuts. In a large bowl, mix together flour, sugar, and baking powder. Set aside.

Take your strawberries and jam and create a puree. Promise this step won’t want to be missed.
Create a well with the dry ingredients
This dough is thick but be sure not to overmix to help preserve more flavor.

STEP THREE: In a seperate bowl, whisk together the sour cream, milk, egg, vanilla, and melted butter. Use rubber spatula to mix wet ingredients into dry- just until fully combined. Do NOT overmix or it won’t be as tender.

STEP FOUR: Spoon or use piping bag to scoop donut batter into greased donut pans until batter is level with the top of pan, ⅔ full. Use damp fingers to gently smooth out the tops.

Carefully fold in strawberry puree.
Scoop or pipe strawberry dough into greased donut pan.

STEP FIVE: Bake about 8-10 minutes at 350°F or until lightly golden. Cool in pan slightly, just until they are able to be easily removed. Set donuts on cooling rack.

In a large mixing bowl, beat cream cheese, butter, vanilla and, if desired, salt until fluffy. Gradually beat in enough powdered sugar to achieve desired consistency. Store in the refrigerator.

Strawberry cake donuts taste best eaten the same day; however, any leftovers can be stored in an airtight container in refrigerator for 2 days.

Freezing Instructions: You can freeze the unglazed donuts for up to 2 months. Thaw overnight in the refrigerator, warm up to your liking in the microwave, and top with cream cheese frosting.

FAQ

Are baked donuts just as good as fried? You betcha. A typical fried glazed donut will be more in calories while a baked donut will have much fewer. The difference is the fact that you won’t be dealing with any extra fat from the oil from frying when you bake.

Don’t have a donut pan? Try substituting with a muffin tin. These can be used with some aluminum foil to make a donut mold, which will help to bake donuts into the right shape, with the hole in the middle.

Ingredients

Strawberry puree

  • ½ cup strawberries
  • 1 tablespoon strawberry jam seedless

Strawberry Donut

  • 1 cup all-purpose flour
  • ½ cup granulated sugar
  • 1 tablespoon baking powder
  • 1 teaspoon cinnamon
  • ⅓ cup sour cream
  • 2 tablespoons milk
  • 1 large egg
  • ½ tsp vanilla extract
  • 2 tablespoon unsalted butter melted

Cream Cheese Frosting

  • 4 oz full-fat Cream Cheese softened
  • ¼ cup unsalted butter softened
  • 1½ cups confectioner's sugar

Instructions

Strawberry Puree

  • Stir the ½ cup strawberries with 1 tbsp. of strawberry jam to a small sauce pan over medium heat until smooth. Let continue to cook until the jam has thickened enough to coat the back of a wooden spoon.
  • Transfer to a small bowl to cool and thicken. Set aside to cool.

Strawberry Donuts

  • Preheat oven to 325°F (163°C). Spray donut pan (or muffin pan) with non-stick spray. Set aside. In a large bowl, mix together 1 cup flour, ½ cup sugar, and 1 tbsp. baking powder and 1 tsp cinnamon. Set aside.
  • In a small bowl, whisk together the ⅓ cup sour cream, 2 tbsp. milk, 1 large egg, ½ tsp vanilla, and 2 tbsp. melted butter. Slowly mix wet ingredients into dry- just until fully combined. Do NOT overmix.
  • Use a pastry bag fitted with a large round tip (or a Ziploc bag with a corner cut off) to pipe the batter into a 6-donut pan. If you prefer you could also scoop the dough using two spoons as pictured in the photos above (this is my favorite). Fill the donut cavities about ⅔ full.  Bake 8 to 11 minutes until donuts are set and golden brown. They will spring back when touched. Mine took exactly 10 minutes.
  • Allow to cool slightly before removing from pan, about 5 minutes then remove from pan to cool completely (roughly 45 minutes) Dip donuts into cream cheese frosting 1-3 times, depending on how thick you’d like them frosted. Top with sprinkles, if you would like 🙂

Cream Cheese Frosting

  • In a large bowl, beat cream cheese, butter until fluffy. Gradually beat in enough confectioners' sugar to achieve desired consistency. Store in the refrigerator.

Notes

  1. Freezing Instructions: You may freeze the donuts (glazed or unglazed) for up to 2 months. Thaw overnight in the refrigerator and warm up to your liking.
  2. Sour Cream: Full-Fat Sour cream really brings out the moistness in this bread. However, feel free to substitute with vanilla/plain yogurt. 
  3. Strawberries: I prefer using fresh strawberries because I find using frozen turns doesn’t hold as much flavor. However, if it’s winter don’t worry it might just take a little longer to create the puree.
